Why is my fudge grainy?
If you over-mix your fudge in this recipe, crystals will begin to form and cause the fudge to be a bit grainy. While this is okay and the fudge will still be edible, it’s not your desired outcome.
When mixing the fudge with the electric mixer, mix just until thick ribbons form in the fudge, about 5 minutes. I tend not to scrape down the sides as sometimes crystals form there and I don’t want them mixed into the fudge (don’t worry, you can eat that part straight from the bowl once the rest of the fudge is poured out ;)).
How do I make homemade fudge harden?
Place fudge in the fridge for 30 minutes to an hour to harden. Then, remove from fridge and allow to sit on the counter for 20 minutes for easy slicing. Fudge can be served straight from the fridge, but we find room temperature fudge gives the best texture and flavour.
How do I store fudge?
Store fudge in an airtight container on the counter for up to 1-2 weeks, in the fridge for 3 weeks, or in the freezer for up to 3 months. We find a mason jar full of fudge on the counter to be both pretty and enticing :).

How to make Easy Maple Fudge
In a large microwave-safe bowl, stir together maple syrup, sugar, brown sugar, salt, and whipping cream.
Place bowl in the microwave and cook on high for 6 minutes. Using a silicone or rubber spatula, stir fudge quickly to mix, then place it back in the microwave for an additional 6 minutes.
Carefully remove the bowl from the microwave (fudge will be bubbling and extremely hot!). Stir in butter and vanilla extract.
Using a handheld electric mixer, beat fudge, beginning on the lowest setting to ensure fudge doesn’t spray out of the bowl and burn you! Slowly turn up the speed to high. Beat fudge until thick ribbons form when beaters are lifted out of the bowl (about 5 minutes). Do not scrape down the sides of the bowl. Fudge will be beginning to crystalize on the edges of the bowl, and we don’t want these mixed into the fudge!
Pour fudge into a parchment-lined 9×5 loaf pan, being careful not to scrape any crystals from the sides of the bowl. Because the fudge is still quite warm, use a piece of parchment paper to gently press and smooth the top of the fudge.
Place maple fudge in the refrigerator to cool completely, approximately 30-60 minutes. To slice easily, remove from fridge for about 20 minutes.
