What makes these Double Chocolate Peanut Butter Energy Balls so healthy?
- Dark chocolate: Chock full of antioxidants, dark chocolate is good for the brain, the heart, and the skin! Choose 70% dark chocolate or darker to ensure the most health benefits and least added sugar.
- Dates: A great natural sugar substitute, dates actually help balance blood sugar. They also help with bone health and are very high in fibre. Another great antioxidant food.
- Oats: Rich in fibre, oats will keep you feeling fuller longer. They also lower cholesterol and improve blood sugar control.
- Chia seeds: Chia seeds are loaded with fibre, antioxidants, protien, and Omega-3 fatty acids. They are a super food. What more can I say?!
- Raw cacao powder: Different than cocoa, cacao is chocolate in it’s rawest form. It may reduce the risk of heart attacks, aids in heart health, and balances mood. Also a great source of antioxidants.
- Peanut butter: A healthy source of protein and many vitamins and minerals. Also a good source of magnesium, something lacking in many Western diets.
How to make Double Chocolate Peanut Butter Energy Balls
One reason I love energy balls is because they are so easy to make! This recipe only has 6 ingredients that are simply blended together.
I always soak my dates first to help ensure they are moist enough to puree fairly smooth (you don’t want to make a paste, but do want them pulsed fairly well).
After pulsing my dates in a food processor, I add all of my other ingredients. The blend of cacao powder and dark chocolate give these energy balls a deep, rich, chocolatey taste. In addition, the creamy peanut butter adds a sweet nuttiness, while the chia seeds give each bite the perfect bit of crunch
I like to use a small cookie scoop to measure out my ‘dough’. This way every treat is the same size (and keeps my kids from fussing about who got a bigger piece…).
These Double Chocolate Peanut Butter Energy Balls keep well in the fridge for about a week (if you can keep them around that long!). You may also freeze them in an airtight container for longer storage if needed.
Double Chocolate Peanut Butter Energy Balls
Ingredients
- 1 heaping cup pitted dates
- 2/3 cup rolled oats
- 1/2 cup roughly chopped dark chocolate
- 3 tbsp natural, organic smooth peanut butter
- 1 1/2 tbsp raw cacao powder
- 1 tbsp chia seeds
Instructions
- Soak dates in warm water for 10-15 minutes. Drain.
- Pulse dates in food processor until well-chopped. You’re looking for a texture that is somewhat smooth but with small pieces of dates still intact.
- Add to blender oats, dark chocolate, peanut butter, raw cacao powder, and chia seeds. Pulse until well blended and mixture comes together. Do not make a paste. There should still be some texture but be smooth enough to form balls.
- Using a 1″ cookie scoop or spoon, form dough into 1 inch balls with your hands. If dough is too sticky, add another tbsp cacao. If it is too thick, add a tsp of water at a time.
- Refrigerate energy balls to help them firm up, or eat them immediately.
- Double Chocolate Peanut Butter Energy Balls will keep in the refrigerator for approx. 1 week. Freeze in an airtight container for longer storage if desired.
