Double Chocolate Peanut Butter Energy Balls

This recipe is so good you won't believe it's so healthy! A favourite of kids and adults alike, these energy balls are the perfect midday snack. High in fibre, Omega-3s, and antioxidants. Sweet, nutty, and oh so chocolatey. Energy ball perfection!

Ingredients

  • 1 heaping cup pitted dates
  • 2/3 cup rolled oats
  • 1/2 cup roughly chopped dark chocolate
  • 3 tbsp natural, organic smooth peanut butter
  • 1 1/2 tbsp raw cacao powder
  • 1 tbsp chia seeds

Instructions

  • Soak dates in warm water for 10-15 minutes. Drain.
  • Pulse dates in food processor until well-chopped. You're looking for a texture that is somewhat smooth but with small pieces of dates still intact.
  • Add to blender oats, dark chocolate, peanut butter, raw cacao powder, and chia seeds. Pulse until well blended and mixture comes together. Do not make a paste. There should still be some texture but be smooth enough to form balls.
  • Using a 1" cookie scoop or spoon, form dough into 1 inch balls with your hands. If dough is too sticky, add another tbsp cacao. If it is too thick, add a tsp of water at a time. 
  • Refrigerate energy balls to help them firm up, or eat them immediately.
  • Double Chocolate Peanut Butter Energy Balls will keep in the refrigerator for approx. 1 week. Freeze in an airtight container for longer storage if desired.
