Keyword: chocolate peanut butter energy balls
Servings: 15 balls
- 1 heaping cup pitted dates
- 2/3 cup rolled oats
- 1/2 cup roughly chopped dark chocolate
- 3 tbsp natural, organic smooth peanut butter
- 1 1/2 tbsp raw cacao powder
- 1 tbsp chia seeds
Soak dates in warm water for 10-15 minutes. Drain.
Pulse dates in food processor until well-chopped. You're looking for a texture that is somewhat smooth but with small pieces of dates still intact.
Add to blender oats, dark chocolate, peanut butter, raw cacao powder, and chia seeds. Pulse until well blended and mixture comes together. Do not make a paste. There should still be some texture but be smooth enough to form balls.
Using a 1" cookie scoop or spoon, form dough into 1 inch balls with your hands. If dough is too sticky, add another tbsp cacao. If it is too thick, add a tsp of water at a time.
Refrigerate energy balls to help them firm up, or eat them immediately.
Double Chocolate Peanut Butter Energy Balls will keep in the refrigerator for approx. 1 week. Freeze in an airtight container for longer storage if desired.
