Simple Strawberry Sauce

This Simple Strawberry Sauce is a perfect way to use your freshly picked berries this year. It comes together in minutes and only uses a couple of pantry ingredients. The result is a delicious sauce you can use in so all kinds of ways!

What do I need to make Simple Strawberry Sauce?

Strawberries

The best part! If you’ve got some fresh strawberries on hand that need to be used up, this is a great way to use them. You can also use frozen strawberries if you have them. Instead of chopping them up before making the sauce, just cook them down as whole berries and then crush once they’re soft.

Sugar

For this Simple Strawberry Sauce, you can use a variety of sweeteners. We used regular white sugar, but you could try honey, raw sugar, or even maple syrup. Just be aware that each sweetener will give the sauce a slightly different flavour.

Lemon Juice

The lemon juice brightens up the flavour of the strawberries. I typically use freshly-squeezed lemon juice to get the best flavour, but you can use bottled lemon juice and achieve the same result.

Cornstarch

In order to thicken the cooked strawberries and their juices, cornstarch is added. It’s important to create a ‘slurry’ by mixing the cornstarch with cold water first and then adding it to the simmering sauce. This will give you a perfectly thickened sauce.

Vanilla

I find that a little vanilla warms up this Simple Strawberry Sauce and gives it an extra hint of flavour. I always use pure vanilla extract and recommend you do too, if possible. It’s just a much richer flavour that the artificial variety. And smells like heaven 😉

How to make Simple Strawberry Sauce

Wash strawberries well. Remove green tops and chop strawberries into bite-sized pieces. This doesn’t have to be perfect, as the berries will lose some shape as they are cooked. Place in a heavy saucepan.

Add sugar and lemon juice to strawberries. Heat over medium heat, stirring occasionally, until strawberries have released a lot of juice and the sauce comes to a simmer. Reduce heat to low.

Using a potato masher or the back of a wooden spoon, crush some of the strawberries, leaving some whole. This will create more texture in your sauce.

In a small bowl, stir together cornstarch and 3 tbsp cold water. Slowly add to the simmering strawberries, stirring as you go.

Simmer the sauce for a few minutes until thickened. Stir in vanilla extract. Remove from heat and allow to cool.

How to store Simple Strawberry Sauce

This sauce stores well in a glass jar in the fridge for about a week. If it lasts that long 🙂 Check out all the different ways to use it!

How to use Simple Strawberry Sauce

Here are just a few ways to use your strawberry sauce:

  • as a topping for waffles or pancakes
  • on top of vanilla ice cream for a delicious sundae
  • swirled into vanilla Greek yogurt
  • as a spread with peanut butter on toast
  • spread a layer on top of buttercream in the center layer of a cake for a surprise filling
  • use as a filling for crepes along with some sweetened cream cheese
  • as a topping for a cheesecake
  • stirred into lemonade and soda water for a special summer drink

Simple Strawberry Sauce

Ingredients

  • 1 lb fresh or frozen strawberries
  • ¼ cup granulated sugar
  • 2 tsp fresh lemon juice
  • 3 tbsp water
  • 1 tbsp cornstarch
  • ½ tsp pure vanilla extract

Instructions

  • Wash strawberries and remove stems. Chop strawberries into bite-sized pieces. Place in medium saucepan over medium heat.
  • Add sugar and lemon juice. Cook, stirring occasionally, until juices begin releasing from the berries and sauce reaches a simmer. Reduce heat to low.
  • Using a potato masher or the back of a wooden spoon, crush some of the chopped berries to add thickness and texture to the sauce.
  • In a small bowl, stir together cornstarch and water to form a 'slurry'. The cornstarch should be fully dissolved. Pour slowly into simmering strawberry sauce, stirring until thickened to a sauce consistency. Remove from heat.
  • Stir in vanilla extract. Serve warm, or cool and store in a glass container in the fridge.

Notes

Simple Strawberry Sauce can be stored in a covered glass container in the fridge for up to one week.
Sauce can be frozen for up to 3 months in the freezer. Just be sure to leave room at the top of your jar for the sauce to expand when freezing.
You can use fresh or frozen strawberries for this recipe. If using frozen, skip the chopping step and cook them whole. You may want to crush them a bit more once they’re softened in the sauce.
