Simple Strawberry Sauce
A bright and fresh summer treat using fresh or frozen strawberries and basic pantry ingredients.

- 1 lb fresh or frozen strawberries
- ¼ cup granulated sugar
- 2 tsp fresh lemon juice
- 3 tbsp water
- 1 tbsp cornstarch
- ½ tsp pure vanilla extract
Wash strawberries and remove stems. Chop strawberries into bite-sized pieces. Place in medium saucepan over medium heat.
Add sugar and lemon juice. Cook, stirring occasionally, until juices begin releasing from the berries and sauce reaches a simmer. Reduce heat to low.
Using a potato masher or the back of a wooden spoon, crush some of the chopped berries to add thickness and texture to the sauce.
In a small bowl, stir together cornstarch and water to form a 'slurry'. The cornstarch should be fully dissolved. Pour slowly into simmering strawberry sauce, stirring until thickened to a sauce consistency. Remove from heat.
Stir in vanilla extract. Serve warm, or cool and store in a glass container in the fridge.
Simple Strawberry Sauce can be stored in a covered glass container in the fridge for up to one week.
Sauce can be frozen for up to 3 months in the freezer. Just be sure to leave room at the top of your jar for the sauce to expand when freezing.
You can use fresh or frozen strawberries for this recipe. If using frozen, skip the chopping step and cook them whole. You may want to crush them a bit more once they're softened in the sauce.
