Chocolate Pudding

This is a classic chocolate pudding recipe just like Grandma used to make. Rich, creamy, and so easy to make!

Ingredients

  • ¼ cup cocoa
  • cup sugar
  • ¼ tsp salt
  • cup 2% milk, separated
  • 1 cup 18% table cream
  • tbsp cornstarch
  • 1 tsp pure vanilla extract
  • 1 tbsp butter

Instructions

  • Stir together cornstarch and ¼ cup of milk in a small bowl. Set aside.
  • In a medium saucepan over medium heat, blend sugar, cocoa, salt, 1 cup of milk, and cream. Stir constantly until bubbles begin to form around edge and pudding begins to simmer gently. Reduce heat to low.
  • Slowly pour cornstarch/milk mixture into simmering pudding, stirring constantly to keep pudding from burning. Stir until pudding thickens to coat the back of a wooden spoon. Remove from heat.
  • Stir in vanilla and butter. Pour into serving dishes or large bowl. Cover pudding with cling wrap, pressing wrap directly onto the pudding to avoid a skin forming.
  • Refrigerate until chilled. Serve with whipped cream and strawberries, if desired.

Notes

Pudding can be stored in the fridge for up to a week.
To make this pudding dairy-free, simply replace all milk and cream with dairy-free alternatives. Options include almond milk, coconut milk, cashew milk, and soy milk.
