Ingredients

  • 3 tbsp pure maple syrup we like dark syrup for the richest flavour
  • 1 cup brown sugar again, we use darker brown sugar for richness
  • 1 cup granulated sugar
  • pinch salt
  • 1 cup 35% whipping cream
  • ΒΌ cup butter, cut into pieces
  • 1 tsp pure vanilla extract

Instructions

  • In a large microwave-safe bowl, stir together maple syrup, sugar, brown sugar, salt, and whipping cream.
  • Microwave on high for 6 minutes. Using a silicone or rubber spatula, stir fudge quickly to mix, then place it back in the microwave for an additional 6 minutes.
  • Carefully remove the bowl from the microwave (fudge will be bubbling and extremely hot!). Stir in butter and vanilla extract.
  • Using a handheld electric mixer, beat fudge, beginning on the lowest setting to ensure fudge doesn't spray out of the bowl and burn you! Slowly turn up the speed to high. Beat fudge until thick ribbons form when beaters are lifted out of the bowl, about 5 minutes. Do not scrape down the sides of the bowl. Fudge will be beginning to crystalize on the edges of the bowl, and we don't want these mixed into the fudge!
  • Pour fudge into a parchment-lined 9x5 loaf pan, being careful not to scrape any crystals from the sides of the bowl. Use a piece of parchment paper to gently press and smooth the top of the fudge.
  • Place maple fudge in the refrigerator to cool completely, approximately 30-60 minutes. To slice easily, remove from fridge for about 20 minutes.
