Cinnamon Maple Pecan Granola

- 3 cups rolled oats
- ¼ cup hemp hearts
- ¾ cup pecan halves, roughly chopped
- ¼ cup ground flax seed
- ¼ cup unsweetened coconut (flakes or chips)
- ¼ cup melted butter
- ¼ cup plus 2 tbsp pure maple syrup
- 2 tbsp water
- ½ tsp pure vanilla extract
- ¾ tsp sea salt
- 1 tsp cinnamon
- ¼ tsp nutmeg
- 1 pinch allspice
Preheat oven to 350° F.
Combine oats, hemp hearts, chopped pecans, ground flax, and coconut in a large bowl.
In separate bowl, mix together melted butter, maple syrup, water, vanilla, salt, and spices.
Stir wet ingredients into dry. Spread in a thin layer on a baking sheet (use two baking sheets if needed).
Bake for 18 - 20 minutes, stirring after 10 minutes. Granola should be golden brown but not burned (stay with it!). Allow to cool completely before removing from baking sheet.
Store in an airtight container for up to two weeks.
